Lebanese Snail Sausage
"In 2014 two Italian companies began a project to outsource EU snail production to Lebanon. Both companies agreed to purchase all Lebanese snails and help set up farms and maintain standards. One detail overlooked, however, is that EU legislation prohibits snail imports from Lebanon. This devastated local snail farmers, who were forced to find an alternative market for their produce. To stimulate the local market, Xander Cummins invented the ‘Snail Sausage’. While snails are traditionally consumed in Lebanon only on the day after the first rainfall at the end of the dry season, the new sausage is available all year round as sustenance. Supported by a Dutch NGO called Hivos, the product was developed in collaboration with a local butcher and snail farmers.
