All You Can't Eat: The Frik Show

What happens to the leftover parts of a pig–the hooves, ears, snout and tail–that nobody in the Netherlands wants to eat? Dutch pig farmers are torn between market forces which demand that they produce enough meat to make a living, and government policy which requires them to reduce livestock numbers in order to tackle nitrogen emissions. Camille Pelissou proposes that farmers might be able to close this gap between income and environmental concerns by making use of the leftover ‘fifth quarter’ of the pig. Developed in close collaboration with a farmer, ‘The Frik Show’ is a production line that transforms these leftover parts into Frikandel: the most widely consumed snack in the Netherlands.
